Gardener's Salad

Gardener’s salad is perfect for whatever vegetables you have on your plot, and the proportions can be varied accordingly.

Ingredients(whatever you've harvested):

1 lb/500g courgettes (not too large)
6 oz/150g French beans
6oz/150g peas
12 oz/350g waxy potatoes


Method:

Cook each item until only just tender

Very small courgettes can be left uncooked.

Add chopped mint and toss in a good mustardy dressing

Cooking Time:

Depends on the veggies but say 10-15 mins each.

Final Tip:

Omit the potato and mix with Diana's tomato sauce and serve hot with pasta.
