Ted's Wife's Leeks and Ham
from Ted Bamford, Cuckoo Hill Allotments.


Ted's favourite way of cooking and serving his large and well nourished leeks.

So well done Mrs Bamford!

Teds Leek and Ham
Ingredients (serves 4):

8 large leeks trimmed & washed
8 thin slices of cooked ham
• cheap ham in a packet is best as it curls around easily
1 pint of Mornay Sauce
Cheddar Cheese, or your own favourite
Fresh white breadcrumbs

For the Mornay Sauce:

1½ oz. butter
1½ oz. flour
¾ of a pint of milk
2 oz. grated cheese
1 teaspoon of made mustard
Pepper
Nutmeg (optional)


Method:

Boil or steam the leeks until tender

Drain well.

Wrap the ham around the leeks and place in a greased oven-proof dish.

Pour over the Mornay Sauce

Sprinkle with grated cheese and fresh white breadcrumbs

To make the Mornay Sauce:

Melt the butter in a saucepan

Add the flour and stir for a good minute

Then add the milk, mustard and pepper

Also add some grated nutmeg if you like.

Stir continualy until the sauce is smooth and thick

Finally add the cheese and continue stirring until it is all melted

Cooking Time:

Heat in a fairly hot oven 190 °C/375 °F (Gas Mk 5) for 45 mins until crisp and brown.

Final Tips:

"Best enjoyed with a glass of good wine." says Ted!

This dish can be frozen.
